Kasha Croquettes - pareve

  Amount  Measure       Ingredient -- Preparation Method

   2      cups          cooked kasha
     1/2  cup           whole wheat flour
   3                    scallions
   3      T             dried parsley
     1/2  t             salt or 1 T soy sauce
                        Oil for frying
--See COMMENTS, below, re ingredients--

Place kasha and flour in a large bowl and squeeze the mixture
with your fingers until it holds shape. Add chopped scallions
and parsley to the mixture. Sprinkle in the sea salt or soy
sauce and work in with your hands. Form dough into 2 inch diameter
patties. Heat 1/2 inch oil in skillet and fry patties over
medium heat until brown on each side. Drain on brown paper. To keep
warm, place in 150 deg F oven until ready to serve. Eat plain
or dip in a tiny bit of dijon mustard. I haven't tried it,
but I wonder how it would be with a little mustard mixed right in
with the dough.

Serves: 4. Preparation time: 30 min

3g Protein; 12g Carbohydrate; 0mg Cholesterol; 7mg Sodium

COMMENTS: Well, I tried it tonight, and yes, it was very good, but without
anything to bind the patties together, it didn't want to form them.  So
I added an egg, which worked well enough.  (I will probably add a few
drops of water, too, next time.) --Mimi Hiller
