KC: Mixed Grain Pilaf - meat

four to six servings
If you do not have all the grains called for, use one or two of them.
Webani is a brown rice that resembles wild rice.
2 tsp. vegetable oil
1 onion chopped
2 cloves garlic - smashed
1 Tbsp. chili powder
1/4 tsp. cayenne pepper
3/4 tsp. ground cumin
1/2 cup long grain rice (preferably basmati)
1/2 cup pearl barley
1/4 cup quinoa, rinsed
1/4 cup webani rice
3 cups chicken stock or
(1 can -10 oz.- chicken broth -plus water)
2 sweet red peppers, preferrably roasted,
peeled and diced
1 Tbsp. pine nuts, toasted
1/4 cup chopped fresh cilantro or parsley
Heat oil in large saucepan. Add onion and garlic and cook gently until tender. Stir
in chili powder, cayenne and cumin. Cook for about 30 seconds, stirring constantly ,
until very fragrant. Add basmati rice, barley, quinoa and webani. Stir in well. Add
stock and bring to a boil. Reduce heat, cover and cook gently for 40 to 45 minutes,
until liquid is absorbed. Stir in peppers, pinenuts and cilantro. Taste and adjust
seasonings if necessary.
