KC: Bowtie Pasta with Spinach - dairy

Hi all - here is a little meatless recipe for bowties that I have adapted
and used with a bit of success.  All measurements are approximate.

Baked Bowtie Pasta with Spinach

1 - 8 oz. package bow ties
1 - 10 oz. package frozen chopped spinach, thawed and well drained
24  oz. cottage cheese - 1 % M.F.
1   cup grated cheese - Parmesean
2   eggs, beaten
1   tsp. salt
1   tsp. garlic powder
1/4 tsp. pepper
1 - 32 oz. jar spaghetti sauce with mushrooms
dash of Tabasco sauce

Cook and drain bows. Combine bows, spinach, cottage cheese, 1/4 cup grated
cheese, eggs, salt, garlic powder and pepper. In a 9" x 13" baking pan, pour
1 cup spaghetti sauce. Spread pasta mixture evenly into baking pan. Top with
remaining spaghetti sauce and cheese. Bake at 375° until hot and bubbly,
about 30 minutes.
