Couscous Salad, Summer - pareve

This is a great summer salad! It's pareve and I've used it with both
dairy and meat meals

Couscous Salad (Makes a BIG bowl full! -- can be cut in half)

3 Cups water
1/2 tsp pepper
2 Cups Couscous

1/2 Cup Olive Oil
1/4 to 1/3 Cup Lemon Juice (depends on your taste preference)

2 tomatoes chopped
1 zucchini chopped
1 cucumber chopped
some brocoli chopped
green onions chopped
sliced black olives
(and sliced green olives if desired)
some fresh basil (1/8 to 1/2 Cup fresh)
(and/or anyother fresh veggies to your liking)

Bring water and pepper to boil. Stir in couscous, cover and remove
from heat. Let stand five minutes.

Fluff couscous (with a fork) and let stand 10 minutes uncovered.

Pour into a big bowl and add:
lemon juice
olive oil
salt
pepper
and all veggies.

Chill and serve.

*Hint: You can play with the taste by adding your favorite spices.
For a dairy meal you can add parmeasan cheese (I did this it was
great), or even feta cheese. Watch the amount of lemon juice -- the
first time I made it I gagged at the strong lemon taste and had to do
a ot of playing around to get it right!!
