KC: Chocolate Pudding from Scratch - dairy

Want to make chocolate pudding from scratch instead from the powdered
mix? This is how.

Ingredients:

3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
2 squares (2 oz.) unsweetened chocolate, coarsely chopped
2 slightly beaten egg yolks or 1 beaten egg
2 tablespoons butter
1 1/2 teaspoons vanilla

In a heavy medium saucepan combine the sugar, cornstarch and salt. Stir
in the milk and coarsely chopped chocolate. Cook and stir over medium
heat til the mixture is tickened and bubbly. Cook and stir for 2 minutes
more. Remove the saucepan from the heat.

Gradually stir about 1 cup of the hot mixture into the beaen egg yolks
or whole egg. Return the egg mixture to the chocolate mixture in the
saucepan. Cook and stir over low heat for 1 to 2 minutes more; DO NOT
BOIL. Remove the saucepan from heat. Add the butter and vanilla; stir
til the butter is melted.

Pour the pudding into 1-quart bowl. Cover the surface with clear plastic
wrap. Chill in the refrigerator, without stirring, about 3 hours or til
cold. To serve, spoon the pudding into individual dessert dishes.
