French Chocolate Rice "Cream" - pareve

Posted by : Blanche Nonken

I made a really good chocolate ice "cream" a couple of days ago -
I used my Donvier Ice Cream Maker:

French Chocolate Rice "Cream."

2/3 cup plain or vanilla flavored "Rice Dream"
1/3 cup expeller-pressed canola oil
1/3 cup sugar
1/2 tsp vanilla
1 (extra large or jumbo) egg yolk
3 tbsp cocoa powder, sifted

Place egg yolk in bowl. Beat with whisk, then add oil a little
at a time, whisking after each addition. Oil should emulsify
into egg completely, leaving no oily streaks on yolk.

Add Rice Dream to egg yolk, whisking until mixed. Pour into
small saucepan, add sugar, and heat over low/medium flame,
stirring constantly until just thick enough to coat a spoon.
Turn off heat. Sift in cocoa, add vanilla, and chill. When
cold, add to Donvier Ice Cream Maker, and follow directions for
use.

Yield - about 1 1/2 cups, or about 3 servings.

This stuff is *really* good. I mean, my husband who hates ersatz
ice cream of any kind really liked it. I mean, he scraped out
the ice cream maker with a spoon. He liked it that much.
