Randi asked, "Does anyone have any interesting (and kosher) ground beef recipes 
aside from standard hamburgers and meatloaf?  Most casserole recipes I find
have either milk &/or cheese in them."

      Title: MOUSSAKA
 Categories: Main dish, Vegetables, Beef, Jewish
      Yield: 4 servings
 
      1 lg Eggplant; peeled
           Oil
      1 lb Ground beef; or lamb
      2    Onions; chopped
      1 ts Sugar
      1    Egg
      1 c  Tomato sauce; divided
    1/2 c  Water
    1/2 ts Cinnamon
 
  Preheat oven 350. Slice eggplant into 1/4 inch slices.
  Brush both sides with oil. Broil both sides until
  lightly browned. Beat egg with 1/2 c. tomato sauce;
  add meat & onion. Thoroughly blend together. Line7x11
  inch baking pan with 1/2 of the eggplant-spread meat
  mixture on top. Top with remaining eggplant. Mix 1/2
  c. tomato sauce with water, sugar, pepper, & cinnamon.
  Pour over the eggplant. Bake uncovered 1 hour until
  top is browned
