Sweets: Choux Fritters - pareve

     1/2  cup           butter or margarine
   1      cup           boiling water
     1/4  teaspoon      salt
   1 3/4  cups          flour
   4                    eggs
   4      cups          vegetable oil -- (12 oz)
                        granulated sugar

Combine butter, boiling water, salt, and flour in a saucepan over moderate
 heat.  Beat mixture vigorously until it leaves sides of pan and forms a ball.
 Remove from heat and cool slightly.  Spoon into a mixer or food processor with
 a steel blade, and add eggs one at a time, beating well after each addition.
 When all eggs have been added and mixture is thick, it should hold its shape
 when lifted with a spoon.

Heat oil to 375°F.  Dip a tablespoon first in hot oil, then in batter.
 Carefully drop tablespoonfuls of batter into hot oil and cook until brown on
 all sides.  Remove from oil with a slotted spoon and drain on paper towels.

Sprinkle with sugar and serve hot.
