Latkes: Sweet & White Potatoes with Zucchini - pareve

      1    Zucchini; grated
      1    Sweet potato; grated
      2    White potatoes; grated
      1    Onion; grated
      2    Eggs; beaten
      3 tb Matzo meal
      1 ts Salt
           Vegetable oil for frying
 
  In a large bowl; thoroughly mix all ingredients. Drop
  by spoonfuls into hot frying pan and brown on both
  sides. Drain on heavy paper. Makes 6 latkes.
