Latkes: Sweet Potato and Apple - pareve

Beverly Leavitt seems to be covering all her bases on the issue of fat
and Hanukkah foods. In '97, she supplied Hanukkah recipes with an
article titled, "Hanukkah: Forget Fear of Frying -- Love Those Latkes."
This year, her emphasis is on a low-fat preparation with cooking spray
rather than oil. And she adds, "If you want no part of frying you can
spray a baking sheet, add a tad more oil to the batter and bake the
latkes."

Now "tad" is a good Southern word meaning "a little", but it certainly
isn't a quantified amount. I'd guess a tablespoon of oil added to the
batter will produce a good result.

Sweet Potato and Apple Latkes

4 cups sweet potatoes, grated
1 green apple, grated
1/4 cup flour
1/2 cup fresh chives, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
1/4 cup flour
1/2 teaspoon cinnamon
Dash of nutmeg
2 egg whites, beaten
Salt and pepper to taste
Cooking spray

Combine all ingredients except cooking spray in bowl. Coat nonstick
skillet or griddle with spray. Spoon mixture by large tablespoons into
pan; flatten latkes slightly with spatula. Cook for 4 minutes on each
side, or until golden brown. Drain on paper towels and serve
immediately. Makes about 12 latkes.
