Latkes: Rumanian - dairy

Makes 12 to 16 

1 medium onion, finely chopped
2 Tbs. olive oil
1 lb. fresh spinach (stems removed) finely chopped
3 medium potatoes, peeled, boiled, mashed 
3 eggs, beaten
1/2 tsp. each turmeric, cumin 
2 cloves garlic, minced 
oil

Sauté onion in oil until soft. Add spinach and cook, stirring, for 1 to 2
minutes. Place in large bowl and stir in mashed potatoes and remaining
ingredients. Drop by spoonfuls into hot oil and fry until golden brown on both
sides. Drain well on paper towels.
