Latkes: Potato, Maxine's - pareve

Posted by : maxine

I made my first latkes this year (Mom has always been the latke maker in
the family, but my daughter asked, so how could I refuse?), and this is
very close to the recipe I used.

2 Russetts
1 med yellow onion
1/2 tsp salt
pepper to taste
1 egg
2 or 3 Tablespoons of matzo meal
1/2 tsp dill
lots of oil

I grated the onion in 3 parts; someone suggested it, and it does work to
keep the potatoes from turning brown. Mom always used an electric frypan
set to 350^F, but I used the electric stove just below medium-high heat.

Now, how do I get the smell of latkes out of the whole house?
