Avocados Stuffed with Fruit, Yemenite - pareve

Here's an interesting Yemenite vegetarian "stuffed" recipe for
Sukkot.

Yemenite Avocados Stuffed with Fruit

3 large avocados

For stuffing:
1 tablespoon oil
1/2 cup chopped apple
1 tablespoon raisins
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon cinnamon

For sauce:
1 1/2 tablespoons prepared mustard 
1 1/2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons fresh lemon juice

Split the avocados in half and remove the pits. Scoope the meat out of
the skin and reserve.

Preheat oven to 325 F.

Heat the oil in a skillet.  Add the chopped apple and raisins. Saute
until the apple is brown. Cool.  Combine apple mixture with rice,
seasonings, and reserved avocado. Stuff the avocado peels.  Bake for 15
minutes.

Mix together the ingredients for the sauce and pour over the stuffed
avocados.  Continue baking for an additional 5 minutes until the sauce
is hot.
