Applesauce, Golden Cinnamon - pareve

 Bottles of this applesauce make great holiday gifts. Try it served over
 Sweet Potato Pancakes or spread on toast muffins or rice cakes. And, naturally,
 it's delicious all by itself.
        
 Preparation time:  10 minutes + chilling time
       
 Cooking time: 30 minutes
 Per serving:  Calories: 108 Fat: 0.5 g. (4% of calories)
               Fiber:    2.8 g. Cholesterol:0 mg. Sodium: 0 mg.

 Makes:             8 servings

 9 Golden Delicious apples, chopped
 3 tbsp lemon juice
 3 tbsp brown sugar or 1 1/2 tablespoons honey
 2 tbsp water
 1/2 tsp ground cinnamon

 1. In a 4-quart saucepan, combine the
 apples, lemon juice, sugar or honey,
 water and cinnamon. Cover and place
 over medium-low heat. Cook, stirring
 frequently, for 20 to 30 minutes, or
 until the apples are very tender.

 2. Transfer to a large bowl, coarsely
 mash, cover, and chill.
