KC: Smoked Salmon Souffle - dairy

serves 2 - 3

1 Tbsp Butter (margarine)
1 cup milk
1 Tbsp flour
3/4 lb. lox
3/4 cup butter (margarine)
3 eggs separated
dash of pepper

Melt the tablespoon of butter.  Add the milk and then the flour, stirring
until smooth, And simmer it all slowly until it is thickened.  Chop the lox
up fine, saute it gently in the 3/4 cup butter in  another  pan and pour it
into the milk-flour-butter mixture.  Then add the egg yolks and pepper and
stir it all around to blend.  Remove from heat.  Beat the egg whites stiff
and fold them in with everything else.  Now, butter a casserole and pour it
all in and bake for 25 minutes in a preheated 375* oven.

NOTE;  If your salmon is too salty, soak it for a while in some milk, drain
it, and then throw the milk  away and proceed with recipe.
