Herring, Stuffed and Baked - pareve

Baked Stuffed Herrings

   Serves 4-6

   4 fresh herrings, filleted

   Stuffing:

   100g (4oz) breadcrumbs
   15ml (1 tbsp) chopped parsley
   Rind and juice of 1 lemon
   Salt and pepper

   Tomato Madeira Sauce:

   30ml (2 tbsp) tomato puree
   15ml (1 tbsp) vegetable oil
   15ml (1 tbsp) caster sugar (superfine sugar)
   5ml (1 tbsp) mixed herbs
   6-8 black peppercorns
   2 whole cloves
   30ml (2 tbsp) madeira and
   15ml (1 tbsp) cornflour blended together

1  Wash and dry fish and place in ovenproof dish.

2  Mix stuffing ingredients together and stuff fish.

3  Cover with foil.

4  Bake: 350F. for 30 mins.
        
Tomato Medeira Sauce:

1  Simmer all ingredients in saucepan, except cornflour and
   madeira for 5 minutes.

2  Add cornflour and madeira and simmer for another 3
   minutes.

3  Strain sauce into serving jug and serve with stuffed
   herrings.
