KC: Spinach Ricotta Pie - dairy

Crust:
1 1/2 cup flour
1/4 tsp salt
3/8 cup sweet butter (unsalted)
4 tablespoons cold water
Put all ingredients in food processor. Process to a soft ball. (use a little
more water if necessary).
Line a buttered pie plate with the dough. Chill thoroughly.
Filling:
1 1/2 lb ricotta cheese
4 beaten eggs
3/4 lb chopped fresh spinach
2 cloves garlic
1 diced onion
1 teaspoon salt
1 teaspoon basil
3 tablespoons flour
3/4 cup grated cheddar
a dash of nutmeg
Topping:
1 1/2 cup sour cream
paprika
1. Saute spinach, salt, basil, and garlic. Mix all the filling ingredients well.
2. Spread into unbaked pie shell.
3. Top with 1 1/2 cup sour cream and spread to the edges of the crust. Sprinkle
with paprika.
4. Bake at 375 degrees for 40-45 minutes.
