KC: Souffle, Cheese - dairy

Here is a simple but delicious recipe for cheese souffle.
You may add diced salmon to the recipe or other flavors.

                         Cheese Souffle


Serving Size  : 6   
       

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
   2      tablespoons   butter
   2      tablespoons   flour
   1/2    cup           milk -- 1/2 to 1
   1/2  lb              Emmental cheese -- grated
   3                    eggs -- separated
                        salt, pepper, nutmeg


Melt butter in a saucepan until foamy. Stir in flour to make 
a blond roux. Add milk stirring vigorously. Season. Off the 
heat stir in cheese and egg yolks. Whip whites and fold them
into batter. Bake in pre-heated 350 oven for 30 minutes.

NOTES : Any kind of yellow cheese can be used, or even a mixture of
cheeses.
