Blintzes with Three Fillings - dairy

Blintzes
4 oz. (1 cup) all-purpose flour
1/4 teaspon salt
1 egg
1 1/4 cups milk
1 tablespoon oil
oil for frying
extra butter

Mix together the flour and salt. Add the egg, milk and oil. Whisk until
smooth.
Heat a skillet and add a teaspoon of the oil. Pour in sufficient batter
to cover the base of the pan thinly. Fry until brown. Turn the blintzes
out onto a plate , add a spoonful of filling and fold up to form a
parcel. Repeat until all batter is finished. Place the blintzes in a
buttered baking dish, dot with butter and bake in the oven until brown.
at 375 degrees for 30 minutes.

Fillings
The easiest way of all is to add canned pie filling like Comstock apple,
blueberry or cherry pie fillings. They work well or you can make these:

Cheese filling
8 oz. (1 1/3) cups curd cheese
1 egg
2 tablespoons sugar, or to taste

Mix all ingredients together.

Variations:1. Add  1 tablespoon sultanas to the mixture.
2. Place a strawberry or 2-3 pitted black cherries in each portion of
mixture.

Coconut and Raisin filling
4 oz. ( 1 1/4 cups) dried coconut
4 oz. (1 cup) raisins
1 tablespoon orange juice
1 teaspoon lemon juice
1 tablespoon sugar
1 small cooking apple, peeled and grated

Cherry Filling
1 small can (7 1/2 oz.) black cherries, pitted
1 heaping teaspoon cornstarch
1 teaspoon lemon juice

Strain the cherries. Mix together the cornstarch and 2 tablespoons juice
from the can. Heat the rest of the juice from the can, pour over the
blended cornstarch. Return to the pan and boil until it thickens. Add
the cherries and the lemon juice.
Serve with fresh or sour cream.

No more mystery to making these blintzes, at all. We made a blintze
party with all kinds of fillings. Again who do you think liked to make
them the most? The kids, 10 and 11 years old. What a fun way to spend
quality time with your family!
