Blintzes, Low-Fat Farmers or Cottage Cheese - dairy

Yield: filling for 12 blintzes

12 oz.   Dry curd low-fat cottage cheese or farmer's cheese
1 Tbsp.  Sugar
         Butter as needed

Pour off any liquid from the top of the cottage cheese (if needed) and
place in a small bowl and add the sugar.  Mix well.

Place a Tbsp of Cottage cheese/Farmer's cheese and sugar mixture into
the center of the cooked side of the blintz (7" size).  Fold the two
sides over the filling, then turn the bottom up and over, and then the
top up and over, like an envelope.  Fill all 12 crepes.

Saute the blintzes in approx. 1 Tbsp. of butter until golden brown in
color on all sides.  Add butter as needed.  Or if you want, you can skip
the cooking and serve right after you fill the blintzes, just take the
crepe and turn it over so the cooked side is down, then fill as above.

Per serving: 94 Calories, 8g Protein, 4g carbohydrates, 5g fat, 53mg
cholesterol, 19mg Sodium.

personal note:  if you don't fold them up like an envelope (I don't) I
usually make a recipe and a half so there is enough filling.  Plus I
sometimes add some fruit filling (blueberry usually) just to make it
even better!
