My mom used to prepare it the way she prepared any cut of red
meat, nearly...
Saute one large or two small onions, diced, in a large pot. Add
paprika, granulated garlic, salt and pepper to taste to the
onions. When the onions have started to brown, add the tongue
and brown it a little on as many sides as you can manage. Add
water to cover, some celery and carrot if you like for extra
flavor, and simmer for a good couple of hours, until tender.
Remove from water, cool, and peel the skin off the tongue. Slice
and serve warm with a bit of gravy from the pot, or chill then
slice thin for sandwiches.
