Tongue, Beef #1 (2) - meat

I am happy to share with you my 2 favorite recipes for 
tongue.

Roasted tongue:

Boil tongue for several hours (until tender enough to peel) 
with some garlic powder, bay leaves and peppercorns in the 
water. If you own a pressure cooker, this step can be 
accomplished very quickly. Cool and peel tongue. Slice 
several onions into thick slices and place at the bottom of 
a roaster. Place sliced tongue on top of onions, add a tin 
of beef broth or consomme and season to taste. Cover roaster
and cook at 300 degrees for about 2 hours (or more). 

Spanish tongue:

Boil and skin tongue as in previous recipe, then dice meat.

Sauce:

3 diced onions
several stalks diced celery
at least one diced green pepper
several cloves of chopped garlic
saute all veggies until onions are golden

In a large saucepan place:

the sauteed veggies
diced tongue
2 or 3 cooked and mashed carrots
1 tin of peas - pureed in blender WITH the juice
1 tin of undrained mushrooms
2 tins of tomato paste (and about 1 tin of water)
salt, pepper and chili powder to taste.

Bring to a low boil, turn down heat and simmer for about 2 
hours.
