Petcha/P'tcha #2: Calves' Foot Jelly - meat

Here is my bubby-in-law's recipe for Petcha. It sounds like what you are looking
for. I have to say that the proposition of typing this from a vegetarian's POV is
daunting. . I have never made this since the idea is too wierd. If hubby
wants it, hubby makes it!!!

4 Calves' feet (or enough to feed 12 people. Ask butcher and have him chop into
pieces)
4 onions (sliced)
1/4 to 1/2 tsp of garlic powder (Check taste after cooking for awhile and add more
if necessary)
4-6 c. water (enough to cover all the bones)
1 tsp salt (maybe more)
1/2 tsp black pepper
4-6 hard boiled eggs

Have feet chopped. Pour boiling water over them, and scrape with a sharp knife
Combine feet, onions, garlic powder, the water, and seasoning and bring to a
boil. Cook for around 3 hours or so. You should be able to remove meat from
bones. Remove bones from pot and set aside. Then strain the soup. Cut all of
the meat off the bones and add to strained soup. Divide among 2-3 pie plates - or
something shallow. Let set for 1/2 to 1 hour, then slice the eggs and arrange
evenly in the pie plates. Chill.

If you want, you can add 2-3 carrots, chopped and 1 stalk of celery, chopped.
