Karen Selwyn * * * * * * * Mock Chopped Liver (String Bean Vegetarian Pate) Original source: DAILY FORWARD 3 large onions, chopped 2 tablespoons vegetable oil 2 cups green beans, cooked and drained 1 3/4 cups green peas, cooked and drained 3 hard boiled eggs 20 Tam Tams or other salty crackers salt and pepper to taste Saute the onions in the oil over very low heat for 20 minutes until limp, translucent and golden. (Do not rush this step.) Combine the sauteed onions with the remaining ingredients in a food processor. Grind until well processed. Season with salt and pepper. Note: This recipe was a favorite of the Yiddish writer Isaac Bashevis Singer.
