Knishes, Potato-Liver - meat

6 boiled potatoes 1/4 cup flour or matzo meal
2 eggs 1 lb. chopped liver
salt & Pepper to taste 1/4 cup chopped onions, sauteed in
chicken fat or oil

Mash potatoes.
Add eggs, salt, pepper onions and flour or meal.
Form into balls.
Make an indentation in each ball and fill with liver.
Pinch to close and flatten to form patties.
Bake on a greased cookie sheet at 350 F for 35 minutes, or until
lightly browned.

Yield - about 1 doz.
