These are fabulous. They are pareve for those that keep kosher, they
freeze well, and they are usually gobbled up quickly. Make sure you
make a double batch!

Miniature Potato Knishes
3 cups mashed potatoes
2 eggs, slightly beaten
2 tbsp pareve Margarine
1 tsp salt
1/8 tsp pepper
3/8 cup matzah meal or bread crumbs
1 egg yolk beaten with 1 tbsp water
oil for baking sheet
In bowl, combine mashed potatoes with eggs, margarine, salt, pepper,
and matzah meal. (may saute a diced whole onion until nice and brown,
then add to mix) Form into walnut-sized balls Brush with diluted egg
yolk
Place on baking sheet(greased!) and bake in pre-heated oven at 400
degrees Farenheit for 20 minutes or brown. When they bake, they make
their own "crust" so it seems as if they have a pastry around them.
