Garlic Coleslaw - pareve

Pat Gold was a friend of mine, and she died about a year and a half ago.
She worked very hard to help create this newsgroup. I am thrilled to be
able to present some of the recipes she collected, as a memorial to her.

GARLIC COLESLAW (serves 8)

from: California Kosher Adat Ari El Synagogue, North Hollywood, CA.

Garlic Vinaigrette:

 2 tablespoons vinegar 
 2 teaspoons salt (or less) 
 1 teaspoon black pepper (or less) 
 3 small cloves garlic, crushed 
 6 tablespoons vegetable oil 

Salad:
 1 medium head cabbage, shredded 
 2 tablespoons chopped fresh cilantro 
 2 tomatoes, chopped 
 1 cucumber, peeled and chopped 

To make garlic vinaigrette, mix all dressing ingredients and let stand
several hours to blend flavors.

To assemble salad, place cabbage in a large bowl. Add vinaigrette and
cilantro; mix. Add tomatoes and cucumbers.
