Pecan Meringues - pareve

 Betty Newman, in the Jewish Bulletin of Northern California,
 writes:

 "Special occasions from brit milah to bar and bat mitzvah are
 rich and sweet already. But you can sweeten any simcha even
 further with a platter of freshly baked cookies.

 "Most cookies are quick to prepare and easy to serve. Many 
 freeze well, so they can be made in advance.

 "... Pecan Meringues add a light touch to the buffet table. 
 They're ideal for those on a low-cholesterol diet as they 
 contain only egg whites, no yolks ..."

 Pecan Meringues

 Makes about 3-1/2 dozen

 2 egg whites
 2 cups confectioners' sugar
 1 tsp. white vinegar
 1 tsp. vanilla
 2 cups pecan halves

 Beat egg whites until stiff but not dry. Gradually beat in 
 confectioners' sugar, vinegar and vanilla. Fold in pecans.
 Drop by the teaspoon 2 inches apart on greased or parchment
 lined cookie sheets. Bake 12-15 minutes in 300-degree oven 
 (cookies remain light). Remove from pans at once; cool.
