Orange Butter Cookies - dairy

 Makes 2 dozen

 8 ounces (2 sticks) butter, softened
 1 tsp. vanilla
 1 tsp. orange zest
 2/3 cup sugar
 2 large eggs at room temperature
 1-1/2 cups cake flour
 1/4 tsp. salt

 Preheat oven to 375 degrees.

In a large work bowl, cream together the butter, vanilla and
zest. Slowly pour in the sugar, beating all the while. Add one
egg and beat to incorporate, then add the second egg, and beat
to incorporate. Into a separate bowl, sift together the flour
and salt. Add to the butter mixture and stir until thoroughly
ncorporated. Onto a nonstick baking sheet, spoon 1 teaspoon 
of batter at a time. The cookies should be 2 inches apart.
Bake for 7 to 9 minutes, or until golden.
