Chocolate Cheesecake Muffins
These muffins shared in our offering for the Taste of
Kawarthas Food Fair and contributed somewhat to us winning
the best booth in the show award.
Ingredients:
1-1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 teaspoon baking soda
1 cup water
1/3 cup oil
1 tablespoon vinegar
1 teaspoon vanilla
1-8 oz. pkg. cream cheese
1 egg
1/3 cup sugar
6 oz.pkg. choc. chips
Mix together the first four ingredients, then add the next
four. Blend together and fill muffin cups 1/2 full with this
batter. Top with the following mixture creamed together:
8-ounce package cream cheese, 1 egg, 1/3 cup sugar. Divide
a 6-ounce package of chocolate chips and sprinkle on top of
the muffins.
Bake at 350 degrees for 20 to 30 minutes. This recipe makes
20 to 40 depending on the size.
