1 c. almonds
1 medium seedless orange
2 eggs
3/4 c sugar
1/2 c oil
2 tsp baking powder
2 3/4 c. flour
Chop almonds coarsely, about 12 to 15 seconds Quarter orange,
but do not peel. Process until fine, about 25 seconds. Add
sugar, eggs and oil. Process about 10 seconds Add baking
powder, flour and almonds. Process with several on/off
turns, just until flour is blended into dough. Shape into 3 rolls,
flouring your hands for easier handling. Place on greased
cookie sheet. Bake at 350F for 25 minutes. Dough will be
cake-like and not quite baked. Slice into 1/2" slices with
sharp knife. Place cut-side down on the cookie sheet and return
to oven at 250F for 1 hour, or until dry and crip.
Archivist's note: Mandelbrot (Yiddish) or Kamishbrot (Ukranian)
is derived from the Italian biscotti, meaning "twice baked."
