Mandelbread #1 - dairy

Posted by : 8paper

Here's my basic recipe, which would be easy enough to change
to chocolate w/the addition of cocoa.

 3 sticks butter or 1 1/2 c oil
 6 eggs
 2 t baking powder
 2 c sugar
 2 t almond extract
 6 c flour
 2 t vanilla
1 c nuts or poppy seeds,
1/2 cup (I would think) of cocoa (optional)

Cream butter and sugar. Add eggs, flour, flavorings, nuts
(cocoa). I form the stiff batter into a couple of thick lines
on the cookie sheets. Be sure to leave about 1 -1 1/2" between
the lines on the cookie sheets as the dough WILL spread. Bake at
350 until the loaves are brown. Remove from oven and slice
the cookies while still warm. Separate the cookies on the sheet
and replace in oven to finish drying out. (When you slice the
rows of the mandel brodt, the dough should be slightly
soft).

Archivist's note: Mandelbrot (Yiddish) or Kamishbrot (Ukranian)
is derived from the Italian biscotti, meaning "twice baked."
