KC: Biscotti, Traditional & Chocolate Orange - dairy

Hi.  On the urging of Karen Selwyn, I am posting my biscotti recipe-the
traditional and the chocolate chip variation.

375 degrees

2 1/2c. sugar
6 eggs
1/2 c. milk
2 sticks butter
pinch of salt
6 tsp. baking powder
1/2 c. anise seed
1 c. chopped nuts
7c. flour, more if needed

Cream butter and sugar.  Add eggs, one at a time.  Add dry
ingredients,
stir well.  Add nuts and seeds. 
Shape into four loaves and place on greased cookie sheets.
Bake for 30-35 minutes until golden brown.
Remove from oven and place loaves on a cooling rack until they are
cool enough to handle.  
Slice each loaf into 3/4" slices, place slice side up on the cookie sheet
and bake again for 15 -25 minutes, until golden browner.  
Cool on racks, store in an airtight container.
Makes a lot, easily halved.

To make Orange-Chocolate Biscotti:

Instead of almonds, anise seeds, and milk, substitute an equal
amount of orange juice, 1 1/2 c. mini-chocolate chips,  1c. chopped
walnuts and the grated orange peel of two oranges (about 1-2 TBS). 
These amounts are guesswork, play around until it looks right.
