Fruit and Nut Gems - pareve

A very special treat -- especially for those who cannot tolerate
concentrated sweeteners,  and for those who are allergic to wheat.  These
naturally sweet munchies contain no added sweeteners, and no flour.  They deliver a big jolt
of potassium, a  mineral vital to the rhythmic beat of your heart.  Oat
Bran  and lecithin makes them a boon to cholesterol-watchers.  All this and flavors that cozy
up to your tongue with all the nostalgia of an old -fashioned  bar.  Maybe
you should double the recipe.

1 cup raisins (Plumped by soaking for 1/2 hr.)
1 cup pitted prunes, chopped
1 1/2 cups chopped walnuts
3 Tbsp Oat Bran
2 Tbsp lecithin granules
3 eggs, lightly beaten, if you're limiting egg yolks, use the whites only

Preheat oven to 350 F.

In a mixing bowl, combine raisins, prunes, nuts, oat bran and lecithin
granules.  Add the beaten eggs, or egg whites and mix well.

Spoon the batter into the cups of 2 miniature muffin tins, lightly greased
or lined with paper baking cups.  Bake for 20 minutes.

Yield: 2 dozen miniature fruitcakes
Approximately 95 calories each
