Vegetarian Crockpot Cholent #5 - pareve

Here is the cholent I've got simmering away on my kitchen counter right
now:

A couple of potatoes, peeled and thickly sliced
A couple of  sweet potatoes, ditto
A couple of parsnips, ditto
A couple of carrots, ditto
1 large onion, ditto
A couple of cloves of garlic, ditto
A few mushrooms, cleaned and sliced
A couple of handfuls of dried chickpeas
A couple of handfuls of barley
A few frozen veggie dogs, cut in pieces
A sauce of some kind (this week I used Hunt's Italian tomato sauce, but
just about any kind will do - I've even used honey mustard!).
Fill up with water to cover everything, and let cook on low from
Thursday evening. I check things and add some more water Friday morning.
Since Shabbat comes in very early this time of year, we have the cholent
for Friday night dinner. Earlier in the year I would set it up Friday
morning and have it for Saturday night dinner.

You can use any kind of dried bean, and the veggies vary according to
what I have in my fridge. This is a very forgiving recipe. I used to add
frozen peas and corn, but haven't recently.
