Helzel, Empire's - meat

In the Empire Kosher book "From Our Family to Yours" commemorating the
company's 60 years, there is this recipe for Stuffed Helzel dated from 1938:

2 cups flour
1 medium carrot, grated
1/2 Empire Kosher rendered chicken fat (schmaltz)
1 onion, grated
1/2 tsp salt
1/4 tsp pepper
Chicken neck skin

Mix all ingredients, except chicken neck skin, into a dry mixture.  Stuff
the chicken neck skin, which you have cut off from the chicken.  Put the
helzel alongside an Empire roasting chicken and roast until the chicken is
done.
