In the Empire Kosher book "From Our Family to Yours" commemorating the company's 60 years, there is this recipe for Stuffed Helzel dated from 1938: 2 cups flour 1 medium carrot, grated 1/2 Empire Kosher rendered chicken fat (schmaltz) 1 onion, grated 1/2 tsp salt 1/4 tsp pepper Chicken neck skin Mix all ingredients, except chicken neck skin, into a dry mixture. Stuff the chicken neck skin, which you have cut off from the chicken. Put the helzel alongside an Empire roasting chicken and roast until the chicken is done. Recipe from Kitchen Nice, Empire Kosher.
