Chocolate Cake, Double - pareve

I don't think they come any more simple than this. The recipe is both
kosher and pareve. Note that it also is *egg free*. That is not a
mistake. The resulting cake is moist and flavorful.

Double Chocolate Cake [Pareve]

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

1-2/3 cups all purpose flour (do not use self-rising)
1 cup packed brown sugar or granulated sugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 teaspoon vinegar
1/2 teaspoon vanilla
1/2 cup semi-sweet chocolate chips

Heat oven to 350 F/175 C.

Mix flour, brown sugar, cocoa, baking soda, and salt with a fork in an
ungreased square pan; 8 x 8 x 2 inches (20 x 20 x 5 cm).

Mix in remaining ingredients except chocolate chips.

Sprinkle chocolate chips over batter.

Bake until wooden pick inserted in center comes out clean; about 35-40
minutes.

Sprinkle with powdered sugar if desired.

Cake can be mixed in bowl if desired.

When I made this earlier in the week, I doubled the recipe, so I mixed
it in a bowl; baked it in a 9 x 13 x 2 in. pan (23 x 33 x 5 cm).
