Cheesecake Square - dairy

Posted by : Jackie Metz

This is a non-springform recipe that my family called
cheesecake cookies because we cut them into squares but it
could be made in a tart or pie pan and cut in wedges.

1/3 C butter
1/3 C packed brown sugar
1 C flour
1.2 C chopped pecans or walnuts
1/4 C sugar
8 oz creamcheese
1 egg
2 TB milk
1 TB lemon juice
1/2 tsp vanilla

Cream butter with brown sugar. Add flour and nuts. Mix
until crumbs form. Save 1 cup and press the rest into an 8
in. square pan (or tart pan). Bake 350 for 12-15 min. Cool.

Blend sugar and creamcheese until smooth. Add egg, milk,
lemon juice, and vanilla. Beat well. Spread over crust.
Spread saved crumbs over the top. Bake at 350 for 25 min.
Cool and refrigerate.
