Cheesecake, Chocolate Marbled - dairy

Marbled Chocolate-OrChocolate Cheesecake



This is my family's favorite cheesecake.


12 servings                                  

preheat oven to 475 F. 

Crust: **
1-1/2 cups finely crushed chocolate wafers, vanilla cookies 
  or graham crackers 
1 cup finely ground, blanched almonds 
1/4 c. margarine, melted 

Filling: 
32 oz. cream cheese, soft 
  (regular, light or non-fat works equally well) 
1 cup sugar                    
3 Tbsp. flour           
1/2 tsp. vanilla extract  
1/2 tsp. rum extract 
4 eggs, room temperature
2 egg yolks
1-1/2 cup (8 oz.) chocolate chips, melted 
  (can melt in cream, take care not to burn)
1/4 cup heavy cream

1.  Mix crust ingredients well.  Pat into a greased 9" springform pan
    (bottom only); set aside. 
2.  In a large bowl beat cream cheese until creamy. 
3.  Add sugar & flour; beat until well blended. 
4.  Mix in extracts. 
5.  Add eggs and 2 egg yolks; one at a time, beating until well blended. 
6.  Stir in chocolate chips and cream. 
7.  Pour onto crust. 
8.  Bake 15 minutes.  Reduce heat to 225o F. for 1 hour. 
9.  Turn off oven, let cake stand in oven 15 minutes. 
10. Remove cake to wire rack to cool. Remove sides of pan Chill in
    refrigerator. 

** Sometimes I buy a chocolate crumb crust that comes in a pie pan and
pop it out into the greased springform pan, making sure it spreads
evenly over bottom of the pan and just pour the filling on top.  Works
great.
