Apple Coffee Cake - dairy

Ingredients:

1    Cup    Raisins
1    Cup    Water
2 Tabls     Instant coffee

Put the ingredients in a small saucepan, bring to a boil. 
Cool, drain and keep water/coffee a side for later use.

2           Eggs
1/2 Cup     Butter - I used Margarine with butter taste.
2   Cups    Sugar
2  Tabls    Vanilla extract
2-3/4 Cups  Flour
2  Tabls    Baking powder
1  Tabl     Cinnamon
1/4 Teas    Salt 
3 Med       Apples - peeled, cored and cut into small pieces.

Topping:

3  Tabls    Water
2  Tabls    Cocoa
6  Tabls    Sugar
1/4 Cup     Butter
1/4 Teas    Rum  extract
1    Teas   Vanilla extract
2  Tabls    Broken walnuts for decorating.

Directions:
Mix in a bowl dry ingredients , Flour,baking, cinnamon and salt.

In the electric bowl cream till fluffy butter + sugar .Then add the eggs
one after another + 1 Tabl of flour.
Add the rest of the flour + alternate with the coffee / water.
Switch off , and add the raisins + apples. Mix well by hand.

Pour over buttered 28 cm spring form bake pan, and bake in pre heated
375 F hot oven for 45 - 55 minutes till cake is set.

Topping:
Just before the cake is ready, put the water, cocoa, and sugar to a boil,
and mix well.
Take off the fire and blend well in the butter, rum and vanilla extract.
Prick the top of the hot cake, pour the topping over the cake.
Sprinkle the walnuts, and cool.

I kept it for 3 days covered in the fridge, and served the cake at room
temperature.

Delicious.
