Potatonik #1 - pareve

I got this recipe from Joan Nathan's Jewish Cooking in America. I've never
used it, but the other recipes are good. If it's a joy, please tell me.

Potatonik--(375 oven)

1 pkg. yeast (1 TB)
1/4 cup warm water
pinch sugar
2 1/2 lbs potatoes
2 1/2 c flour
1 1/2 TB salt
2 med onions, sliced into thin circles
Roughly 2 TB oil

Combine yeast, water, sugar, and allow to sit until it starts to bubble (10
mins)
Peel, grate potatoes, combine with flour, and add yeast and salt. Mix, and
allow to rise in oiled bowl for 45 minutes.
Layer the onions in a 9-by 12-inch or 11- by17-inch greased dish. Cover with
the potato mixture and flatten.
Bake in preheated 375 degrees for 10 minutes. Brush with the oil and bake 35
more minutes, until golden.
