Brisket, Barbara's Best - meat

   5      pounds        Brisket -- trimmed 
   1      large         onion -- sliced 1/8" thick
   1      package       onion soup mix
   2      teaspoons     garlic powder
   2      tablespoons   brown sugar
   2      cups          carrot -- shredded
   2      teaspoons     paprika

Pre heat oven to 300 ..first rub brown sugar all over the 
meat..then onion soup mix, sprinkle the remaining 
ingredients, ending with the paprika..cover tightly with 
foil..bake at 300 for two hours..then lower the temp to 225 
and bake for 5 more hours..cool for 1 hour before slicing.. 
serve with hot degreased pan juices.. this recipe can be 
made one day ahead, sliced and put back in the natural pan 
juices..It is easier to slice when it is cold.. Also all of 
the fat hardens and can be removed for a lower fat gravy.
