THAI GARLIC CHICKEN Per serving:
  • 2 T Stir fry oil
  • 6 ounces boneless, skinless chicken thighs, shredded and marinated in
  • 1 teaspoon ketjap manis *
  • 1/4 t salt
* This is an Indonesian ingredient, used in many Southeast Asian cuisines.  It is a sweet, thick soy sauce; there is no substitute.  You can try to mix heavy soy sauce with a bit of sugar, but it just isn't the same thing.

Combine in small bowl and set aside:

  • 1/4 t chili paste
  • 1 t ketchup
  • 3 large cloves garlic
  • 1/4 t sesame oil

    Heat the wok and add oil.
    Stir fry the marinated chicken till cooked through.
    Add ketchup/garlic mixture and stir fry about 10 seconds.
    Serve immediately.
