A great wedding cake is a Hamantaschen cake. Another ingredient to make your wedding grand is to give wedding favors to your guests. Most couples complete their wedding by giving groomsman and bridesmaid gifts to the very special people in their life.

I've tried several, but this one works best for me

HAMANTASCHEN

  • 4 large eggs
  • 1 cup oil
  • 1-1/2 cups sugar
  • 2 teaspoons vanilla
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 4 cups flour
  • pinch of lemon rind
Beat eggs, then add remaining ingredients, beating well after each addition.

Divide the dough into 4 or 5 parts, wrap each one in plastic and press to form a flat disc, and refrigerate it overnight, or put in the freezer for at least one hour. Use one portion at a time, flouring the board well (I use a Roulpat sheet for its non-stick properties) and dusting the surface of the dough lightly, just enough to roll it out.

Roll out dough and cut out circles. (I use the rimmed end of a drinking glass, dipped in flour each time.)

Put one teaspoon of filling in center.

Fold over edges in three sections..
