Grilled Pineapple Salmon

  • 1/4 cup pineapple juice
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon bourbon
  • 1/4 teaspoon fresh cracked pepper
  • 1/2 teaspoon minced fresh garlic
  • 1/2 cup vegetable oil
  • Two 8 oz. skinless salmon fillets


Combine juice, soy sauce, brown sugar, bourbon, pepper, garlic and oil in a bowl. Place the salmon in a glass dish side by side. Pour marinade over.  Refrigerate for 1 to 3 hours.

Drain, reserving marinade, and grill over med.-high about 5-7 minutes per side or until fish flakes-basting with the reserved marinade.
