Black-Eyed Pea Salad

Black-Eyed Peas have been a traditional part of the New Year's Day menu, eaten to bring luck in the new year. This is a delicious way to make sure that you have your portion!
 

  • 3 15-ounce cans black-eyed peas
  • 2 cups cubed cooked ham*
  • 1 cup chopped celery
  • 1 large green bell pepper, ribs and seeds removed, chopped
  • 1 medium onion, chopped
  • 1 teaspoon yellow mustard
  • 1 cup mayonnaise, or to taste
  • 1 teaspoon salt
  • 1 teaspoon black pepper


*can be substituted with turkey ham for those who don't eat pork.....or just about any meat substitute you like!

Drain the black-eyed peas and place them in a large bowl.

Stir in the remaining ingredients and mix well.

Refrigerate.

Serve cool.
