There's no reason why you couldn't use another vegetable for this...leeks or onions would be good...even broccoli florets.

Artichoke-Cheese Squares
 

  • 2 tablespoon olive oil
  • 1/3 cup minced onion
  • 2-3 cloves garlic, minced
  • 2 whole eggs
  • 2 egg whites
  • 1  14 ounce can artichoke hearts, drained, trimmed, and chopped
  • 1/4 cup dry bread crumbs *
  • 1/2 pound Swiss cheese
  • 2 tablespoon fresh minced parsley
  • 1/4 teaspoon oregano
  • 1/2 teaspoon  salt
  • Pepper or dash Tabasco, to taste

  • Heat a medium-sized skillet over moderate flame, then add oil.  Saute onion and garlic until soft and translucent. Do not brown.

    Beat eggs and whites in bowl. Add chopped artichoke hearts.  Stir in rest of ingredients.

    Pour into a greased or sprayed 7 x 11 baking dish.

    Bake 25-30 min. at 325 F until set.  Let cool before cutting into squares.

    * For Passover, substitute matzo meal.
