Spinach Balls with Mustard Sauce

2 packages (10 oz. each) frozen chopped spinach, thawed and squeezed dry
2 cup herb-seasoned stuffing mix, finely crushed
1 cup (about 5 oz) freshly grated Parmesan cheese
2 tablespoon melted butter or margarine
5 green onions, ends trimmed and finely chopped, including tops
3 large eggs
1 teaspoon poultry seasonng mix
1/4 teaspoon cayenne
Mustard Sauce (recipe follows)


In a large bowl, combine spinach, stuffing mix, cheese, butter, onions, eggs, poultry seasoning, and cayenne; mix well. If making ahead, cover and chill up to 1 day.

Preheat oven to 350 degrees F.

Shape spinach mixture into compact 1-inch balls. Arrange balls slightly apart on 2 ungreased 12- by 15-inch baking sheets. Bake in oven until golden brown, about 20 minutes.

Spear balls with toothpicks and dip into mustard sauce


Mustard Sauce: Stir together 1/2 cup Dijon, 1 cup nonfat sour cream, 1 tablespoon dry white wine and 3/4 teaspoon sugar.
