Potato: Firehouse Potatoes

Firehouse Potatoes

2 lb baking potatoes, peeled and quartered
1 c chopped onion
4 cloves garlic, minced
2 tbsp margarine or butter
1/2 tsp salt
1/4 tsp coarsely ground black pepper
1/2 c warmed milk


Cook potatoes in boiling, lightly salted water for 20 to 25 minutes or until tender. Drain.

In a saucepan, cook onion and garlic in hot butter until onion is lightly browned, about 10 to 12 minutes.
Stir occasionally. Set aside.

Mash cooked potatoes. Beat in onion and garlic mixture. Add salt, pepper, and enough warmed milk to make the potatoes light and fluffy. Season as desired with additional salt and pepper.

6 servings.
