Italian Eggplant

Italian Eggplant

1 medium eggplant, pared and cut into 1/2 inch slices
1/2 cup melted butter
3/4 cup Contadina Italian style bread crumbs
1/4 tsp. salt
1 ( 26 oz.) jar Spaghetti sauce
1 tbsp. crushed oregano leaves
1/2 to 1 cup Shredded mozzarella cheese


Preheat oven to 450 degrees.

Dip eggplant in butter, then in mixture of breadcrumbs and salt. Place on greased cookie sheet.

Spoon sauce atop each slice; sprinkle with oregano and cheese.

Bake in hot oven for 10 to 12 min. or till done.

Should serve 4 or 5.
